HEATHER’S ICE CREAM BARS
Ingredients
3 large bananas · 12 pitted dates · 6 tsp almond butter · 200g dark chocolate (cacao 70% or 85%) · ¼ cup finely chopped almonds.
Prep time: 15 mins · Freezing time: 1 hr · Total time: 1 hr 15 mins.
Method
Line a tray with greaseproof paper. Halve the bananas and trim a thin slice off the bottom so they sit flat. Top each banana with a teaspoon of almond butter then flatten two dates on top. Leave in the freezer on the lined tray for an hour.
Melt the chocolate using a bain-marie, then dip each frozen banana in to coat. Return to the tray, sprinkle with almonds, and enjoy immediately — or keep frozen for later. When serving, leave out for 10 minutes to soften slightly.
